How It All Started

The scent of slow-smoked brisket and hickory wood filled the air as Brett Robertson stood in front of his brand-new smoker, the Florida sun beating down on him. This wasn't the first time he'd fired up a pit, but it was the first time he was doing it without his father by his side.

Growing up in Kansas City, Brett had spent his childhood in the thick of the Midwest's best barbecue scene. His father, Bill "Butch" Robertson, was a pitmaster who didn't just cook—he created. His ribs fell off the bone, his burnt ends were legendary, and his sauce? Well, let's just say it was the kind of thing people fought over at the dinner table. Butch taught Brett everything: the patience it took to perfect a brisket, the importance of the right wood, and that real barbecue wasn't just about food—it was about bringing people together.

When Butch passed, Brett knew he couldn't let his father's legacy fade. So he packed up his knives, his father's secret recipes, and his lifelong passion and headed south to Boca Raton. Some called him crazy for bringing Kansas City barbecue to Florida, but Brett knew better. The love for good barbecue had no borders.

So, in 2024, Brett opened Wild Bill's BBQ. It was a labor of love, a tribute to his father and the art of barbecue.
